The History of Recipes
Experts have proved the existence of recipes back into history, in truth as far back into history as the early Egyptians, and quite possibly further than that. In practice though, these, old recipes were just simple hieroglyphic recipes for meal preparation.
Fascinatingly, the most ancient recipe found, according to food historians is a series of ancient tablets in Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel `blissful`. During the time of the Roman Empire a man called Apicius compiled a few scripts which described recipes enjoyed by the Romans. In his publication, he tells us how the meals of wealthy Romans were separated into starters, main meal and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. He also describes how the ancient Romans used a wide range of aromatic flavors, including a few you will know for example bay, fennel and parsley. As our culinary historical trip moves on a few more years there are two interesting recipe books dating from the fourteenth century : a book called `Forme of Cury`, and another named `Curye on Inglish`. Despite their titles, they have no connection with the indian food that is served today, but rather accounts of the types of food prepared for the wealthy. In the fifteenth century, the Crusaders brought back many new foods, spices and herbs from the Middle-East, including spices like parsley, basil and rosemary. The introduction of these new culinary ideas was responsible for an explosion in publications on food, the majority of which are now in private libraries. The introduction of television brought us celebrity chefs and the accompanying recipe books. And that neatly brings us to the present day and the internet revolution, permitting everyone to access thousands of recipes just like those on sites such as this. |
