1 cup sour cream
1/4 cup mayonnaise
2 tbsp lemon juice
1/2 tsp salt
1/4 tsp tobasco pepper sauce
Directions
Combine all the ingredients in a saucepan and heat gently. DO NOT
ALLOW TO BOIL. Spoon over the vegetables when serving or place them
in a casserole topping with the sauce and sprinkling with bread
crumbs. Place under the broiler until the crumbs are brown, 1 to 2
minutes. Ideal with cooked fresh asparagus, or broccoli, cabbage,
cauliflower, green beans and so forth.

The History of Recipes
Written recipes as a concept can be observed way back into the distant past, at least as far back as the Egypt of the Pharoahs, and possibly even further than that. Interesting though that is, these, old cook books were just basic pictorial instructions for meal preparation.
In an interesting twist, the oldest recipe discovered so far, according to academics is a series of clay tablets in ancient Sumerian describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel exhilarated. Much later, in Roman times a man called Apicius compiled a few documents describing recipes prepared by wealthy roman citizens. In his scrolls, Apicius recounts how the meals were separated into hors d`oeuvres, main course and dessert, a style of dining still practiced today. Additionally, he informs us how the Roman cooks used many different spices and herbs, including some familiar names for example bay, rue and parsley. Continuing our culinary historical journey, there are a couple of interesting books from the 14th Century ; a cookery book called `Forme of Cury`, and another called `Curye on Inglish`. The titles are a little misleading though, these books are not about the indian food that is popular today, but rather descriptions of the types of meals served to the nobility of the period. Later on, in the 15th century, the Crusaders brought back many foods, spices and herbs from middle-east cuisine, such as basil and coriander. These new culinary innovations caused a torrent in publications on food, many of which are now in private collections. Over the succeeding few hundred years, the wealthy families of the West competed with each other to offer the best banquets, and because of this cooks and their recipe collections were much in demand. Notwithstanding that, it wasn`t until the nineteenth century that fine cookery and recipe collections rose to prominence. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, devoted their lives to collating, testing, and writing down the recipes of their peers. When we get to the twentieth century, cooking books were in great demand, due to higher levels of literacy, people having more spare time and having more disposable income. The TV revolution brought us TV cookery programs and the spin-off recipe books. Which brings us neatly to the present day and the invention of the internet, permitting us all to access thousands of recipes like those on this site. |
