The History of Recipes
It is quite feasible to trace the history of transcribed cooking instructions far back into distant history, in truth as far into history as the ancient Egyptians, and potentially, even further back. Having said that, these, early cookbooks were just basic pictorial, hieroglyphic or cunieform recipes for meal preparation.
Interestingly, the most ancient recipe discovered so far, according to academics is a collection of clay tablets in ancient Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel blissful. Closer to modern times, we find two interesting recipe books dating from the fourteenth century - a cookery book entitled `Forme of Cury`, and another, similary entitled `Curye on Inglish`. Don`t be fooled by the titles though, these two books are not about the spicy food that is familiar to us all today, but rather descriptions of the types of meals served to the wealthy. Later, in the 15th century, people returning from the crusades brought back many new spices and herbs from Arab cuisine, including spices like coriander, basil and rosemary. These new culinary innovations led to a torrent in cookery books, many of which are now in academic collections. During the next few hundred years, the powerful and wealthy tried to serve up the most exotic banquets, and because of this the best chefs and their recipes were at a premium. Notwithstanding that, it was during the nineteenth century the formal cooking and recipe collections rose to prominence. The Famous Mrs Beeton in the UK, and Fannie Merritt Farmer in the US, spent years to collecting, trying out, and recording popular recipes of the day. Like it or not, the introduction of TV gave us celebrity chefs and the accompanying recipe books. And that brings us to the present day and the invention of computers and the internet, allowing everybody to access thousands of recipes such as those found on sites such as the one you are reading now. |
