The History of Recipes
It is quite feasible to track the history of transcribed cooking instructions far back into ancient history, certainly as far back into recorded history as the ancient Egyptians, and maybe further still. Interesting though that maybe, these, old cook books were just very basic pictorial, hieroglyphic or cunieform instructions for preparing meals.
In an interesting twist, the most ancient recipe discovered, according to Professor Solomon Katz, is a series of stone tablets in ancient Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel wonderful. During the time of the Romans a roman called Apicius compiled some scripts which described recipes prepared by his fellow Romans. In his works, he describes how the meals were split into starters, main meal and desserts, something that is very familiar to us today. Aspicius also tells us how the ancient cooks made use of many different herbs, including some familiar names for example thyme, rue and asafoetida. Moving our culinary historical trip onwards, there were two interesting cookery books which were published in the fourteenth century - one book called `Forme of Cury`, and another, similary entitled `Curye on Inglish`. Surprisingly, they have no connection with the indian curry that appears on menues today, but rather descriptions of the types of food eaten by the upper classes of those days. Later on, in the 15th century, people returning from the crusades brought us many new foods and herbs from the holy land, including spices like coriander, basil and rosemary. These new herbs and spices was responsible for an explosion in recipe books, some of which are now in academic collections. The arrival of TV gave us celebrity chefs and the demand for the accompanying recipe books. Which pretty much brings us to the present day and the invention of computers and the internet, allowing us all to search through massive numbers of recipes like those on this web site. |
