The History of Recipes
It is quite feasible to follow the history of transcribed cooking instructions way back into the distant past, in truth as far back into recorded history as ancient Egypt, and maybe even further. In practice though, these, old cookbooks were just very basic pictorial, hieroglyphic or cunieform recipes for food preparation.
Interestingly, the most ancient recipe discovered so far, according to historians are some tablets in the Sumerian language which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel blissful. Moving on, there are two interesting cookery books which appeared in the 1300s ; one book titled `Forme of Cury`, and another called `Curye on Inglish`. Despite their titles, these two books are unconnected to the curry that is served today, but instead descriptions of the types of food eaten by the rich. Later, in the 15th century, the Crusaders brought back many new foods and herbs from Arab cuisine, including spices such as rosemary and coriander. The introduction of these new culinary ideas created an eruption in manuscripts on food, the majority of which are kept safe in academic collections. During the next few hundred years, the powerful families of the West tried to lay on the most exotic meals, and because of this chefs and their recipe collections were greatly in demand. However, it was during the 19th century that formal cookery and cookery books reached a high level of popularity. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, devoted their lives to assembling, verifying, and writing down recipes that were common in the better off homes of the day. Like it or not, the introduction of TV brought us celebrity chefs and the recipe books that accompanied them. Which pretty much brings us up to date and the invention of the internet, permitting everybody to access thousands of recipes like those on our web site. |
