The History of Recipes
We are able to track the history of meal recipes far back into the distant past, certainly as far back into recorded history as pharonic Egypt, and maybe further still. Interesting though that maybe, generally, these ancient records were just very basic pictorial recipes for food preparation.
Later on, in The time of the roman empire around 25BC a roman called Apicius created a collection of scripts detailing recipes prepared by his fellow Romans. In his publication, Apicius recounts how the meals were split into hors d`oeuvres, main meal and desserts, a style of dining still practiced today. Aspicius also describes how the Roman cooks were skilled in the use of a good variety of spices and herbs, including a few that will be familiar to modern chefs such as thyme, fennel and dill. During the following few hundred years, the upper classes competed to serve the most extravagent banquests, and consequentially the best cooks and their collection of recipes increased in prestige. Even so, it wasn`t until the 19th century that fine cooking and recipe collections really came of age. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, spent years to collecting, testing, and publishing popular recipes of the day. The revolution that is television gave us TV cooks and the demand for the spin-off recipe books. Which brings us neatly to the present day and the invention of computers and the internet, permitting us all to access massive numbers of recipes such as those found on this site. |
