The History of Recipes
Food historians have tracked the existance of recipes far back into distant history, in truth as far back as the ancient Egyptians, and quite possibly further than that. In practice though, generally, these old recipes were just very simple hieroglyphic instructions for food preparation.
Interestingly, the most ancient recipe discovered, according to food historians is a collection of clay tablets in Sumerian which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel wonderful. During Roman times around 25BC a roman called Apicius wrote a collection of documents which described recipes cooked by his fellow Romans. He recounts how the roman meals were separated into appetizers, main course and afters, something that is very familiar to us today. Additionally, he recounts how the cooks of Roman times used many different herbs and spices, including some that we all recognise for example basil, mint and parsley. In the fifteenth century, people returning from the crusades brought back many new spices and herbs from the holy lands, including spices like basil and rosemary. These new culinary innovations led to a torrent in cookery books, some of which still exist in private cookery archives. Like it or not, the introduction of television gave us celebrity TV chefs and the accompanying recipe books. Which pretty much brings us up to date and the internet revolution, allowing everybody to search through thousands of recipes like those on our web site. |
