The History of Recipes
Transcribed cooking instructions as an idea can be found back into distant history, certainly as far as early Egypt, and quite possibly further than that. Having said that, in the main part, these ancient recipes were just primitive pictorial instructions for food preparation.
The truth of the matter is, the most ancient recipe in existence, according to academics is a collection of ancient tablets in the Sumerian language which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel `wonderful`. As we move into Roman times around 25BC a man called Apicius compiled some scripts showing how to cook the recipes prepared by wealthy roman citizens. In his works, Apicius recounts how the meals were separated into hors d`oeuvres, main meal and desserts, a style of dining still practiced today. Aspicius also informs us how the chefs of Roman times made use of a wide range of spices and herbs, including many that are still in use today for example basil, mint and dill. Moving on, we have two books which date from the 1300s : a cookery book entitled `Forme of Cury`, and another, similary named `Curye on Inglish`. Amusingly, these books are unconnected to the indian curry that is popular today, but instead accounts of the types of food prepared by the cooks of the rich and powerful of the time. Later, in the 15th century, knights returning from the crusades brought us many new spices and herbs from Arab cooking, including spices such as parsley, basil and rosemary. These new spices and herbs caused an eruption in books on cooking, many of which are now in private libraries. By the advent of the 1900s, recipe books were starting to become popular mostly due to more people being able to read, increased leisure time and having more disposable income. The revolution that is television brought us celebrity TV chefs and the recipe books that accompanied them. Which pretty much brings us to the present day and the invention of the internet, allowing everybody to search through massive numbers of recipes just like those on this site. |
