The History of Recipes
It is possible to track the history of meal recipes back into the far past, at least as far back into recorded history as the ancient Egyptians, and possibly even further. Interesting though that is, in the main part, these ancient cook books were just very basic pictorial, hieroglyphic or cunieform instructions for food preparation.
Interestingly, the oldest recipe in existence, according to experts are some stone tablets in Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel exhilarated. Later on, in Roman times 25BC a man called Apicius assembled some documents describing recipes prepared by wealthy Romans. In his works, he describes how the meals of wealthy Romans were divided into appetizers, main meal and dessert, a very modern way of dining. Additionally, he describes how the ancient chefs were skilled in the use of a good variety of herbs and spices, including a few you will know such as thyme, fennel and dill. Closer to modern times, there are some recipe books from the fourteenth century : a recipe book titled `Forme of Cury`, and another titled `Curye on Inglish`. The titles are somewhat misleading tho`, these two books have no connection with the indian food that we all know today, but rather descriptions of the types of food prepared by the chefs of the wealthy. In the fifteenth century, knights returning from the crusades brought us many new foods and herbs from the holy lands, including spices such as basil and rosemary. The introduction of these new culinary ideas caused an eruption in recipe books, most of which are now in private libraries. During the succeeding few centuries, the wealthy families of Europe tried to serve up the most extravagent meals, and consequentially chefs and their collection of recipes became highly prized. However, it wasn`t until the 19th century that cookery and recipe books rose to prominence. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, dedicated the best years of their lives to assembling, verifying, and writing down recipes to help cooks of their time. By the arrival of the 1900s, recipe publications are increasing in popularity mostly as a result of better eduction, leisure time and disposable income. |
