The History of Recipes

Transcribed cooking instructions as a concept can be tracked back into distant history, in truth as far as the Egypt of the Pharoahs, and maybe further still. Interesting though that is, mostly, these ancient cook books were just very basic hieroglyphic recipes for food preparation.

The truth of the matter is, the most ancient recipe in existence, according to food historians is a series of tablets in the Sumerian language which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel exhilarated.

As we move into Roman times 25BC a roman called Apicius created a collection of documents showing how to cook the recipes cooked by wealthy roman citizens. In his works, he recounts how the meals were split into hors d`oeuvre, main meal and dessert, something that is very familiar to us today. He also tells us how the early Romans were skilled in the use of many aromatic flavors, including a few that are still present in modern kitchens like basil, fennel and asafoetida.

As we move on, there were some interesting books dating from the 1300s ; a cookery book called `Forme of Cury`, and another named `Curye on Inglish`. Despite their titles, these are unconnected to the indian food that appears on menues today, but rather descriptions of the types of meals enjoyed by the upper classes of that time.

Later, in the fifteenth century, people returning from the crusades brought us a variety of foods, spices and herbs from Arab cooking, including spices such as rosemary and coriander. The introduction of these new culinary ideas prompted an eruption in recipe publications, some of which still exist in private collections.

By the advent of the 20th century, cookery books are greatly in demand due to more people being able to read, more spare time and having more money to spend.

The revolution that is television gave us TV chefs and the accompanying recipe books.

And that neatly brings us to the present day and the invention of computers and the internet, permitting everybody to access massive numbers of recipes like the ones you can find on sites such as this.
