3 c corn -- * see note
1/2 red bell peppers -- seeded
: and chopped
1/2 green bell peppers -- seeded
: and chopped
4 scallions -- thinly sliced
1/2 ts ground cumin
3 TB vegetable oil
1 1/2 TB white wine vinegar
: black pepper -- to taste
* Use freshly cooked corn-on-the cob; scrape kernels from cob to
measure 3 cups.
Place the corn in serving bowl; add rest of ingredients and mix well.
Yield: about 3-1/2 cups.

The History of Recipes
Transcribed cooking instructions as an idea can be traced far back into the distant past, certainly as far back into recorded history as the Egyptians, and potentially, even further back. In practice though, generally, these ancient cookbooks were just basic hieroglyphic instructions for preparing food.
In an interesting twist, the oldest recipe discovered, according to academics are some stone tablets in Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel exhilarated. Moving our culinary historical trip onwards, there were a couple of recipe books from the fourteenth century - a cookery book titled `Forme of Cury`, and another, similary named `Curye on Inglish`. Don`t be fooled by the titles though, these books are nothing to do with the indian food that appears on menues today, but instead recipes for the types of meals enjoyed by the rich and wealthy people of the period. In the 15th century, people returning from the crusades brought us a variety of foods, spices and herbs from the holy land, including spices like coriander, parsley, and basil. These new culinary innovations caused a surge in recipe publications, some of which are kept safe in private collections. Over the next few hundred years, the upper classes competed to serve the best banquets, and consequentially the best chefs and their recipes were at a premium. Notwithstanding that, it wasn`t until the 1800s that haute cuisine and recipe publications reached a high level of popularity. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, spent years to collecting, testing, and recording recipes common in their social group. The arrival of TV gave us TV cooks and the spin-off recipe books. And that pretty much brings us to the present day and the invention of the internet, allowing us all to access massive numbers of recipes like the ones you can find on this web site. |
