The History of Recipes
Recipes as an idea can be found far back into antiquity, at least as far back into recorded history as ancient Egypt, and maybe even further. However, generally, these old cook books were just primitive hieroglyphic or cunieform instructions for preparing food.
In an interesting twist, the oldest recipe in existence, according to experts is a series of stone tablets in the Sumerian language which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel wonderful. Later on, in The time of the romans 25BC a roman called Apicius wrote a number of scripts describing recipes prepared by the Romans. In his scrolls, Apicius recounts how the roman meals were split into appetizers, entrees and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius also informs us how the Roman cooks were skilled in the use of many different herbs and spices, including some that we all recognise for example thyme, mint and dill. Later on, in the 15th century, people returning from the crusades brought back many spices and herbs from Arab countries, including spices such as coriander, basil and rosemary. These new foods and spices created a surge in recipe books, some of which are kept safe in private collections. Over the succeeding few centuries, the powerful and rich houses competed with each other to offer the most exotic meals, and as a consequence, chefs and their recipes became highly prized. Nevertheless, it was during the 1800s that cookery and recipe publications became popular. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, devoted much of their lives to collating, verifying, and writing down the recipes of their peers. When we get to the 20th century, cook books are in great demand, mostly due to more people being able to read, leisure time and disposable income. The arrival of TV gave us TV cookery programs and the recipe books that accompanied them. Which pretty much brings us to the present day and the invention of the internet, permitting everyone to access massive numbers of recipes like those on our web site. |
