Consomme De Mer Recipe

Ingredients

1 jim vorheis
10 1/2 oz consomme
1 can water
8 oz bottle clam juice
2 tsp lemon juice
1/2 cup whipping cream
1/2 tsp salt


Directions

Heat the consomme, water, clam juice and lemon juice to boiling. Whip
the cream with the salt. Serve hot with a large dollop of cream on
each portion.

The History of Recipes

During the succeeding few hundred years, the powerful and rich competed with each other to serve the most exotic banquets, and as a result chefs and their recipe collections could command a high salary. However, it was during the 19th century that cooking and cookery books became really popular. Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, dedicated years of their lives to collating, trying out, and writing down the recipes that were being prepared for the better households.

By the arrival of the 1900s, cookbooks are in high demand, mostly due to increased literacy, more spare time and having more money to spend.
