1/2 cup clams, minced, or
6 1/2 oz clams, minced, well drained
2 tbsp clam juice
1 cup cream cheese, softened
1 tbsp chili sauce
1/8 tsp hot sauce
1 tbsp onion juice
1 tsp lemon juice
1/4 tsp worcestershire sauce
Directions
Blend the clams, clam juice, and cream cheese to a smooth
consistency. All all of the other ingredients and blend well. Cover
and chill. Makes about 1 3/4 cups of dip SUGGESTED DIPPERS: Carrots,
Fennel, Zucchini, Wheat Crackers

The History of Recipes
It is quite possible to follow the history of recipes way back into ancient history, in fact as far back into history as pharonic Egypt, and maybe even further. In practice though, these, old cook books were just primitive hieroglyphic instructions for food preparation.
Progressing into The time of the roman empire 25BC a man called Apicius compiled some scripts showing how to cook the recipes enjoyed by wealthy Romans. In his publication, he tells us how the roman meals were separated into appetizers, main meal and dessert, something that is very familiar to us today. Additionally, he informs us how the cooks of Roman times were skilled in the use of a wide range of herbs and spices, including a few that are still present in modern kitchens for example basil, fennel and asafoetida. For the centuries that followed, the rich families of Europe strove to serve the most extravagent meals, and as a consequence, chefs and their collection of recipes were greatly in demand. However, it was during the 19th century that haute cuisine and recipe publications really came of age. Mrs Beeton in the UK, and Fannie Farmer in the US, devoted much of their lives to assembling, verifying, and recording recipes common in their social group. The introduction of the TV brought us TV chefs and the demand for the accompanying recipe books. Which pretty much brings us up to date and the invention of the internet, allowing everybody to access massive numbers of recipes just like those on our web site. |
