The History of Recipes
It is quite feasible to trace the history of recipes far back into distant history, in fact as far back into history as the Egyptians, and maybe further still. In practice though, sadly, these ancient records were just simple hieroglyphic instructions for meal preparation.
The truth of the matter is, the most ancient recipe in existence, according to academics is a series of ancient tablets in Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel blissful. As we move into Roman times around 25BC a roman called Apicius created some scripts showing how to cook the recipes enjoyed by his fellow Romans. He tells us how the meals of wealthy Romans were divided into hors d`oeuvres, main course and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Additionally, he informs us how the Roman cooks were skilled in the use of many herbs, including a few you will know such as bay, mint and asafoetida. Moving on, we find some books from the 14th Century ; a cookery book called `Forme of Cury`, and another, similary titled `Curye on Inglish`. The titles are a little misleading though, these books are not about the indian food that is served today, but rather accounts of the types of meals cooked for the upper classes of that time. Later, in the 15th century, people returning from the crusades brought back a variety of foods, spices and herbs from Arab countries, including basil and coriander. These new culinary innovations caused an increase in recipe publications, some of which still exist in private cookery archives. By the advent of the 1900s, cookbooks are greatly in demand due to more people being able to read, people having more spare time and having more disposable income. |
