The History of Recipes
Experts have tracked the existance of recipes far back into history, certainly as far back as the Egyptians, and maybe even further. However, these, old records were just primitive pictorial recipes for food preparation.
Interestingly, the oldest recipe discovered so far, according to academics is a collection of ancient tablets in the Sumerian language which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel `wonderful`. Later on, in Roman times 25BC a roman called Apicius wrote a number of documents describing recipes enjoyed by his fellow Romans. In his works, he recounts how the meals of wealthy Romans were split into hors d`oeuvres, entrees and desserts, something that is very familiar to us today. Aspicius describes how the Roman chefs used many herbs, including a few you will know for example thyme, mint and asafoetida. In the fifteenth century, people returning from the crusades brought back many foods, spices and herbs from Arab cuisine, including spices such as coriander, parsley, basil and rosemary. The introduction of these new foods and spices caused an outbreak in recipe books, some of which are kept safe in academic collections. During the succeeding few hundred years, the powerful and rich houses competed with each other to serve the best banquets, and because of this chefs and their collection of recipes were at a premium. Nevertheless, it wasn`t until the 1800s that cookery and recipe publications reached a high level of popularity. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, devoted their lives to collating, verifying, and writing down the recipes of their peers. By the arrival of the 1900s, cook books were in high demand, due to higher levels of literacy, leisure time and having more disposable income. |
