The History of Recipes
We can trace the history of `recipes` way back into the distant past, certainly as far into history as the Egypt of the Pharoahs, and possibly even further. In practice though, these, early recipes were just very simple hieroglyphic or cunieform recipes for food preparation.
In fact, the oldest recipe found, according to academics are a few ancient tablets in Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel exhilarated. Progressing into Roman times around 25BC a man called Apicius assembled a few documents describing recipes cooked by his fellow Romans. In his publication, he tells us how the meals of wealthy Romans were split into appetizers, entrees and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius also describes how the Romans made use of many different herbs and spices, including some that we all recognise like basil, rue and asafoetida. For the next few years, the powerful families of the West competed with each other to lay on the most extravagent banquests, and as a result chefs and their recipes were much in demand. However, it was during the 1800s that haute cuisine and cookery books really came of age. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, dedicated the best years of their lives to assembling, verifying, and recording recipes that were common in the better off homes of the day. By the advent of the twentieth century, recipe books are in high demand, as a result of increased literacy, more spare time and having more disposable income. The introduction of the TV brought us cooking programs and the demand for the spin-off recipe books. Which pretty much brings us to the present day and the invention of computers and the internet, permitting everybody to search through massive numbers of recipes like those on our web site. |
