The History of Recipes
It is possible to read the history of written recipes back into the far past, in truth as far as early Egypt, and potentially, even further back. In practice though, in the main part, these early recipes were just basic pictorial instructions for meal preparation.
The truth of the matter is, the most ancient recipe found, according to historians are some clay tablets in Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel wonderful. Later on, in The time of the roman empire 25BC a man called Apicius created a few documents which described recipes prepared by wealthy Romans. He describes how the meals of wealthy Romans were split into hors d`oeuvres, main meal and dessert, a very modern way of dining. Aspicius also informs us how the cooks of Roman times made use of many herbs and spices, including a few that will be familiar to modern chefs for example bay, fennel and dill. Later, we have two interesting cookery books which appeared in the fourteenth century ; one book titled `Forme of Cury`, and another named `Curye on Inglish`. The titles are a little misleading though, these books have no connection with the indian food that we all know today, but instead recipes for the types of meals enjoyed by the upper classes of the period. Later, in the fifteenth century, knights returning from the crusades brought us many new foods and herbs from the East, including spices like parsley and basil. The introduction of these new tastes caused an explosion in recipe manuscripts, the majority of which are kept safe in private libraries. During the following few hundred years, the rich families of Wesstern Europe tried to lay on the most exotic meals, and as a result the best chefs and their recipe collections were greatly in demand. Notwithstanding that, it wasn`t until the 19th century that haute cuisine and cookery books became popular. Mrs Isabella Beeton in the UK, and Fannie Farmer in the US, dedicated the best years of their lives to collating, verifying, and publishing recipes of the day. By the time we get to the 1900s, cooking publications are increasing in popularity mostly as a result of increased literacy, people having increased spare time and having more money. The arrival of television brings us celebrity chefs and the recipe books that accompanied them. Which pretty much brings us to the present day and the invention of the internet, allowing everybody to search through massive numbers of recipes like the ones you can find on our web site. |
