The History of Recipes
We are able to read the history of written recipes way back into ancient history, at least as far back into recorded history as ancient Egypt, and possibly even further than that. Having said that, these, ancient cookbooks were just primitive hieroglyphic instructions for preparing meals.
In an interesting twist, the most ancient recipe discovered, according to food historians are some stone tablets in ancient Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel `wonderful`. Much later, in Roman times a roman called Apicius wrote a few documents which described recipes prepared by his fellow Romans. In his publication, Apicius recounts how the meals of wealthy Romans were separated into hors d`oeuvre, main course and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Additionally, he recounts how the ancient Romans made use of many herbs and spices, including a few that are still present in modern kitchens like bay, mint and dill. Continuing our culinary historical journey, we find two interesting cookery books which appeared in the 14th Century - a book titled `Forme of Cury`, and another, similary called `Curye on Inglish`. Don`t be fooled by the titles though, these are unconnected to the curry that is served today, but rather accounts of the types of meals prepared by the cooks of the nobility of the period. Later on, in the 15th century, people returning from the crusades brought back many new foods and herbs from the holy lands, including coriander, parsley, and basil. The introduction of these new foods and spices prompted a torrent in manuscripts on cooking, the majority of which are now in private cookery archives. Over the succeeding few hundred years, the powerful and wealthy tried to serve the most exotic meals, and consequentially the best cooks and their recipes could command a high salary. Notwithstanding that, it wasn`t until the nineteenth century that formal cookery and cookery books rose to prominence. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, dedicated years of their lives to collating, verifying, and recording recipes that were common in the better off homes of the day. When we get to the twentieth century, cook books were increasing in popularity mostly as a result of better eduction, people having more spare time and having more money to spend. The TV revolution gave us celebrity chefs and the recipe books that accompanied them. Which brings us neatly to the present day and the internet revolution, permitting everyone to search through thousands of recipes like the ones you can find on our web site. |
