The History of Recipes
It is actually possible to trace the history of written recipes back into history, certainly as far back into history as pharonic Egypt, and possibly even further. Interesting though that is, in the main part, these early cook books were just simple hieroglyphic or cunieform recipes for meal preparation.
The truth of the matter is, the oldest recipe in existence, according to Professor Solomon Katz, are a few clay tablets in the Sumerian language which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel exhilarated. Later on, in The time of the romans 25BC a man called Apicius compiled a collection of scripts describing recipes prepared by his fellow Romans. In his scrolls, Apicius recounts how the meals of wealthy Romans were split into hors d`oeuvres, entrees and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef describes how the ancient Romans made use of a wide range of aromatic flavors, including a few that are still present in modern kitchens such as bay, fennel and parsley. Over the succeeding few centuries, the wealthy families of the West competed with each other to serve up the most exotic meals, and as a result the best chefs and their recipe collections were at a premium. However, it wasn`t until the 1800s that haute cuisine and cookery books became popular. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, dedicated the best years of their lives to assembling, trying out, and recording recipes for their fellow cooks to enjoy. When we get to the 20th century, cooking books were in great demand, mostly due to increased literacy, people having increased free time and having more disposable income. The TV revolution brought us TV cookery programs and the recipe books that accompanied them. Which brings us neatly up to date and the internet revolution, permitting everyone to search through massive numbers of recipes just like those on sites such as the one you are reading now. |
