The History of Recipes

Historians have tracked the existance of recipes way back into history, certainly as far as the Egypt of the Pharoahs, and possibly even further than that. Having said that, sadly, these old cook books were just very simple hieroglyphic or cunieform recipes for meal preparation.

In an interesting twist, the oldest recipe in existence, according to Professor Solomon Katz, are some clay tablets in Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel `wonderful`.

Later on, in The time of the romans 25BC a man called Apicius compiled a few documents describing recipes enjoyed by wealthy Romans. In his works, Apicius describes how the meals of wealthy Romans were separated into hors d`oeuvres, main course and dessert, a very modern way of dining. Aspicius also recounts how the chefs of Roman times made use of a wide range of aromatic flavours, including a few that are still present in modern kitchens such as thyme, fennel and dill.

Continuing our culinary historical journey, there are a couple of interesting books from the 1300s - one book titled `Forme of Cury`, and another titled `Curye on Inglish`. The titles are somewhat misleading tho`, these books are not about the indian food that we all know today, but instead descriptions of the types of meals prepared by the chefs of the wealthy.

Later on, in the 15th century, the Crusaders brought back many foods, spices and herbs from Arab countries, such as coriander, basil and rosemary. These new foods and tastes created an increase in recipe publications, the majority of which are kept safe in academic collections.

Over the succeeding few centuries, the wealthy families of the West competed with each other to serve up the best banquets, and as a consequence, cooks and their recipes were greatly in demand. However, it wasn`t until the nineteenth century that haute cuisine and cookery books reached a high level of popularity. Mrs Beeton in the UK, and Fannie Merritt Farmer in the US, dedicated the best years of their lives to assembling, trying out, and recording recipes for their fellow cooks to enjoy.

When we get to the 20th century, recipe publications are in high demand, due to more people being able to read, more free time and being a little richer.
