The History of Recipes
We are able to trace the history of `recipes` back into distant history, certainly as far back into recorded history as the Egypt of the Pharoahs, and quite possibly further than that. Having said that, in the main part, these ancient cook books were just basic pictorial recipes for preparing meals.
In an interesting twist, the oldest recipe in existence, according to historians is a series of clay tablets in the Sumerian language which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel blissful and exhilarated. Progressing into The time of the roman empire around 25BC a roman called Apicius wrote some documents detailing recipes cooked by the Romans. In his scrolls, Apicius tells us how the meals of wealthy Romans were split into hors d`oeuvre, entrees and dessert, something that is very familiar to us today. He also recounts how the cooks of his times used many different herbs, including a few that are still present in modern kitchens for example basil, mint and dill. As our culinary historical trip moves to more modern times we find some recipe books which were published in the fourteenth century - one book titled `Forme of Cury`, and another called `Curye on Inglish`. The titles are a little misleading though, these are nothing to do with the curry that appears on menues today, but rather recipes for the types of food on the menues of the nobility of that period. Later on in the 1400s, the Crusaders brought back a variety of foods and herbs from Arab cuisine, including spices like parsley and basil. The introduction of these new herbs and spices created an increase in recipe manuscripts, most of which still exist in private cookery archives. When we get to the twentieth century, cookbooks were in high demand, as a result of better eduction, people having increased spare time and a general increase in wealth. The introduction of television brought us TV cookery programs and the accompanying recipe books. Which pretty much brings us to the present day and the invention of computers and the internet, allowing everybody to search through massive numbers of recipes such as those found on this web site. |
