3/4 cup papaya, peeled & diced

The History of Recipes
Written recipes as a concept can be tracked far back into ancient history, in fact as far into history as early Egypt, and maybe even further. However, mostly, these ancient records were just basic pictorial, hieroglyphic or cunieform recipes for preparing meals.
Fascinatingly, the most ancient recipe found, according to experts in ancient history is a collection of stone tablets in ancient Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel exhilarated. Progressing into The time of the roman empire around 25BC a roman called Apicius created a collection of documents showing how to cook the recipes cooked by wealthy roman citizens. In his scrolls, Apicius describes how the roman meals were split into starters, main course and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius also informs us how the ancient chefs were skilled in the use of a good variety of herbs, including a few you will know for example thyme, mint and dill. As our culinary historical trip moves to more modern times there were some interesting books which appeared in the 1300s - a book entitled `Forme of Cury`, and another, similary called `Curye on Inglish`. Amusingly, they are not about the spicy food that is served today, but instead accounts of the types of meals on the tables of the nobility of that time. In the 15th century, people returning from the crusades brought us a variety of foods and herbs from the Middle-East, including spices such as coriander, parsley, and rosemary. These new herbs and spices was responsible for a torrent in cookery books, the majority of which are now in private cookery archives. By the arrival of the twentieth century, cookery books are greatly in demand mostly as a result of increased literacy, increased leisure time and a general increase in wealth. |
