The History of Recipes
It is quite possible to trace the history of written cooking instructions back into the distant past, certainly as far as the Egyptians, and possibly even further than that. Having said that, generally, these old records were just simple pictorial, hieroglyphic or cunieform instructions for preparing food.
The truth of the matter is, the oldest recipe in existence, according to academics is a collection of clay tablets in Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel exhilarated. As we move into Roman times around 25BC a man called Apicius assembled some documents detailing recipes prepared by wealthy Romans. In his works, he tells us how the roman meals were separated into appetizers, main meal and desserts, a style of dining still practiced today. He also informs us how the ancient Romans used many different herbs and spices, including a few that will be familiar to modern cooks for example basil, fennel and parsley. Later, in the 15th century, the Crusaders brought back a variety of foods, spices and herbs from Arab countries, such as parsley and basil. These new foods and spices created an eruption in books on cooking, many of which are now in academic collections. By the advent of the 1900s, recipe publications were highly popular due to more people being able to read, people having more free time and having more disposable income. The revolution that is television brought us TV cooks and the spin-off recipe books. And that neatly brings us to the present day and the invention of the internet, permitting everyone to access thousands of recipes like those on our web site. |
