The History of Recipes
It is quite feasible to trace the history of transcribed cooking instructions back into history, in fact as far back into history as early Egypt, and possibly even further. However, sadly, these old recipes were just very simple hieroglyphic or cunieform instructions for preparing food.
In fact, the oldest recipe discovered, according to academics is a collection of tablets in Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel blissful and exhilarated. Progressing into The time of the roman empire 25BC a roman called Apicius assembled a few documents describing recipes enjoyed by the Romans. In his publication, he recounts how the meals were divided into appetizers, entrees and desserts, a very modern way of dining. Aspicius also informs us how the ancient Romans used many spices and herbs, including a few that will be familiar to modern chefs like bay, rue and asafoetida. Later on in the 1400s, knights returning from the crusades brought back many spices and herbs from the holy lands, including spices like rosemary and coriander. These new foods and spices created a surge in books on cookery, most of which are now in academic collections. By the time we get to the 20th century, cookery publications were in high demand, mostly due to better eduction, people having increased leisure time and having more disposable income. The introduction of the TV brings us cooking programs and the accompanying recipe books. Which pretty much brings us to the present day and the invention of the internet, permitting everyone to search through thousands of recipes like the ones you can find on this site. |
