The History of Recipes
Transcribed cooking instructions as an idea can be traced far back into the far past, certainly as far back as early Egypt, and possibly even further. However, generally, these old cookbooks were just very basic pictorial, hieroglyphic or cunieform instructions for preparing food.
During the time of the Romans a roman called Apicius created a number of documents describing recipes enjoyed by his fellow Romans. In his scrolls, Apicius recounts how the roman meals were split into hors d`oeuvre, main course and dessert, a style of dining still practiced today. He also informs us how the Roman chefs used a good variety of aromatic flavors, including a few that are still present in modern kitchens like thyme, rue and dill. Later on, in the 15th century, people returning from the crusades brought back many foods and herbs from the holy land, such as coriander, parsley, and basil. These new foods and spices prompted an increase in recipe publications, many of which still exist in private cookery archives. The arrival of TV gave us cooking programs and the demand for the accompanying recipe books. And that neatly brings us to the present day and the invention of the internet, allowing us all to access thousands of recipes such as those found on sites such as the one you are reading now. |
