The History of Recipes
It is possible to read the history of written recipes back into the distant past, in fact as far back into history as early Egypt, and quite possibly further than that. Interesting though that maybe, in the main part, these ancient recipes were just basic hieroglyphic or cunieform instructions for preparing meals.
The truth of the matter is, the most ancient recipe in existence, according to experts is a series of clay tablets in Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel exhilarated and blissful. Later on, in The time of the roman empire 25BC a man called Apicius assembled a number of scripts showing how to cook the recipes enjoyed by wealthy roman citizens. In his scrolls, he tells us how the meals of wealthy Romans were separated into starters, main course and desserts, something that is very familiar to us today. Additionally, he tells us how the Roman cooks used a wide range of spices and herbs, including many that are still in use today such as thyme, rue and parsley. During the following few hundred years, the powerful families of Wesstern Europe strove to serve the most extravagent meals, and as a consequence, the best cooks and their recipes became highly prized. Even so, it was during the nineteenth century that cookery and recipe publications really came of age. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, devoted their lives to assembling, testing, and recording popular recipes of the day. The arrival of television brought us TV chefs and the demand for the accompanying recipe books. Which pretty much brings us up to date and the invention of computers and the internet, permitting us all to access thousands of recipes just like those on this site. |
