The History of Recipes
It is actually possible to trace the history of written recipes way back into antiquity, in truth as far into history as the Egyptians, and quite possibly further than that. Interesting though that is, sadly, these old cookbooks were just very simple hieroglyphic or cunieform instructions for preparing meals.
As we move into Roman times 25BC a roman called Apicius compiled a number of documents which described recipes enjoyed by his fellow Romans. He recounts how the meals of wealthy Romans were separated into appetizers, main course and dessert, something that is very familiar to us today. This early Roman chef tells us how the ancient Romans used a good variety of spices, including some that we all recognise such as basil, fennel and parsley. During the following few centuries, the rich and powerful families of Wesstern Europe tried to serve up the best banquets, and as a result the best chefs and their collection of recipes were at a premium. However, it was during the nineteenth century that fine cookery and recipe publications reached a high level of popularity. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the USA, dedicated their lives to collecting, testing, and recording recipes for their fellow cooks to enjoy. By the advent of the 1900s, cookery books were increasing in popularity due to increased literacy, people having increased free time and having more disposable income. |
