The History of Recipes
Historians have tracked the existence of recipes back into ancient history, in fact as far back as the early Egyptians, and maybe even further. In practice though, sadly, these old records were just very simple pictorial instructions for food preparation.
Fascinatingly, the most ancient recipe in existence, according to experts in ancient history are some stone tablets in Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel exhilarated. As we move into The time of the roman empire 25BC a man called Apicius created a number of scripts showing how to cook the recipes cooked by his fellow Romans. In his publication, Apicius describes how the roman meals were separated into appetizers, main course and dessert, a style of dining still practiced today. This early Roman chef tells us how the cooks of Roman times made use of many aromatic flavours, including many that are still in use today such as basil, mint and dill. In the 15th century, knights returning from the crusades brought us a variety of foods, spices and herbs from Arab countries, including spices such as basil and rosemary. These new culinary innovations created an increase in publications on food, many of which are now in academic collections. Over the next few centuries, the rich families of the West strove to offer the most exotic banquets, and as a consequence, chefs and their collection of recipes increased in prestige. Notwithstanding that, it was during the nineteenth century that fine cookery and recipe collections rose to prominence. The Famous Mrs Beeton in the UK, and Fannie Farmer in the US, dedicated years of their lives to collecting, trying out, and recording popular recipes of the day. The introduction of television brings us TV chefs and the accompanying recipe books. Which brings us neatly up to date and the invention of computers and the internet, allowing everybody to search through thousands of recipes like the ones you can find on our site. |
