1 cup cornmeal
1/4 cup all-purpose flour
1/2 tsp baking soda
1/2 tsp salt
1/4 cup liquid egg replacer
3/4 cup soy milk
1/2 cup non-dairy sour cream
1 1/2 cup corn kernels
Directions
In a large bowl, combine cornmeal, flour, soda & salt. Set aside. In a
small bowl, combine the egg replacer, soy milk & "sour cream". Pour
into the dry ingredients & stir until just moistened. Fold in the
corn.
Lightly oil a large skillet & heat over medium high heat. Ladle
batter into pan & cook until brown on both sides. Serve immediately.

The History of Recipes
We are able to read the history of written recipes way back into history, in fact as far as ancient Egypt, and maybe further still. In practice though, in the main part, these early cook books were just primitive pictorial, hieroglyphic or cunieform recipes for food preparation.
The truth of the matter is, the oldest recipe discovered so far, according to experts in ancient history are some clay tablets in Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel `exhilarated, wonderful and blissful`. Moving on, there were two recipe books which appeared in the fourteenth century ; a book titled `Forme of Cury`, and another titled `Curye on Inglish`. Surprisingly, these two books are nothing to do with the indian curry that is served today, but rather recipes for the types of meals eaten by the rich and wealthy people of those days. During the following few centuries, the upper-class families of the West competed to serve up the most exotic meals, and because of this the best chefs and their recipe collections increased in prestige. Nevertheless, it was during the 1800s that cookery and recipe publications rose to prominence. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, dedicated years of their lives to collating, testing, and publishing popular recipes of the day. By the advent of the 1900s, cookery publications were in great demand, mostly as a result of higher levels of literacy, people having increased free time and a general increase in wealth. |
