The History of Recipes
Recipes as an idea can be traced back into the far past, at least as far into history as the Egyptians, and possibly even further. Interesting though that maybe, mostly, these old records were just simple pictorial recipes for preparing food.
During Roman times 25BC a man called Apicius assembled a few documents which described recipes prepared by wealthy roman citizens. He recounts how the roman meals were separated into starters, main meal and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef informs us how the ancient chefs were skilled in the use of a good variety of aromatic flavors, including a few that will be familiar to modern cooks for example bay, fennel and asafoetida. During the succeeding few centuries, the powerful families of the West tried to lay on the most exotic banquets, and because of this the best cooks and their recipe collections increased in prestige. Notwithstanding that, it was during the 19th century that cooking and cookery books reached a high level of popularity. Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, spent years to collecting, trying out, and publishing recipes of the day. By the arrival of the 1900s, recipe books are increasing in popularity due to higher levels of literacy, people having more leisure time and a general increase in wealth. |
