The History of Recipes
Recipes as an idea can be observed back into ancient history, in fact as far back as the Egyptians, and potentially, even further back. However, in the main part, these early records were just very simple hieroglyphic recipes for meal preparation.
Later on, in Roman times 25BC a roman called Apicius created a collection of scripts which described recipes cooked by wealthy roman citizens. In his scrolls, he describes how the meals of wealthy Romans were separated into hors d`oeuvre, main meal and afters, a style of dining still practiced today. This early Roman chef describes how the ancient Romans were skilled in the use of many different herbs, including a few you will know such as basil, fennel and parsley. During the succeeding few hundred years, the upper classes tried to offer the most extravagent banquests, and as a result cooks and their collection of recipes could command a high salary. However, it wasn`t until the 19th century the formal cooking and recipe collections really came of age. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the USA, devoted much of their lives to collating, verifying, and writing down popular recipes of the day. By the arrival of the 1900s, cookery books are starting to become popular as a result of increased literacy, people having more free time and having more money to spend. |
