The History of Recipes
It is possible to track the history of meal recipes way back into ancient history, certainly as far into history as early Egypt, and quite possibly further than that. However, sadly, these early records were just primitive pictorial recipes for food preparation.
In fact, the oldest recipe discovered, according to experts is a series of stone tablets in Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel exhilarated and blissful. Later on, in The time of the romans around 25BC a man called Apicius compiled some documents describing recipes cooked by wealthy roman citizens. In his scrolls, he describes how the meals of wealthy Romans were split into hors d`oeuvre, main meal and afters, something that is very familiar to us today. This early Roman chef tells us how the Roman chefs made use of many herbs and spices, including many that are still in use today like thyme, rue and asafoetida. Later, we have a couple of interesting recipe books which appeared in the fourteenth century : a recipe book called `Forme of Cury`, and another named `Curye on Inglish`. Surprisingly, these are unconnected to the curry that appears on menues today, but instead accounts of the types of meals served to the rich and powerful of that time. Later on in the 1400s, knights returning from the crusades brought us many foods and herbs from the holy lands, including spices like parsley, basil and rosemary. These new herbs and spices prompted an eruption in manuscripts on cooking, some of which are kept safe in private cookery archives. By the time we get to the 20th century, recipe books were in high demand, mostly as a result of better eduction, people having increased free time and disposable income. |
