The History of Recipes
It is quite possible to prove the history of recipes way back into history, in fact as far back as the Egyptians, and quite possibly further than that. Having said that, in the main part, these old recipes were just simple hieroglyphic or cunieform instructions for preparing meals.
As we move into The time of the romans around 25BC a roman called Apicius wrote a collection of documents showing how to cook the recipes prepared by his fellow Romans. In his publication, he tells us how the roman meals were split into hors d`oeuvre, entrees and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef recounts how the Roman chefs were skilled in the use of many spices and herbs, including a few that are still present in modern kitchens for example bay, fennel and parsley. During the next few centuries, the powerful and wealthy strove to serve the most extravagent banquests, and consequentially chefs and their recipes could command a high salary. Even so, it wasn`t until the 1800s the formal cooking and recipe publications rose to prominence. Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, spent years to collating, testing, and recording recipes common in their social group. The revolution that is television gave us celebrity TV chefs and the demand for the spin-off recipe books. Which pretty much brings us to the present day and the internet revolution, allowing us all to access thousands of recipes like the ones you can find on this site. |
