The History of Recipes
It is quite feasible to trace the history of transcribed cooking instructions way back into antiquity, in fact as far into history as the early Egyptians, and possibly even further than that. Interesting though that is, these, old recipes were just basic pictorial instructions for meal preparation.
Interestingly, the most ancient recipe found, according to Professor Solomon Katz, is a collection of stone tablets in the Sumerian language which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel wonderful. As we move into The time of the romans 25BC a roman called Apicius compiled a few documents showing how to cook the recipes cooked by wealthy Romans. In his works, Apicius recounts how the meals of wealthy Romans were separated into hors d`oeuvre, main meal and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef describes how the Roman chefs made use of a wide range of herbs, including some familiar names like bay, rue and dill. During the succeeding few centuries, the rich and powerful families of Europe strove to serve up the best banquets, and as a result cooks and their recipes were highly sought after. However, it wasn`t until the 19th century that cooking and recipe publications became really popular. Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, dedicated the best years of their lives to assembling, verifying, and writing down recipes that were common in the better off homes of the day. By the time we get to the twentieth century, cookery publications are greatly in demand due to increased literacy, people having more free time and being a little richer. |
