The History of Recipes
Written recipes as an idea can be found far back into the distant past, in truth as far back into history as the Egypt of the Pharoahs, and potentially, even further back. Having said that, these, ancient cook books were just very simple hieroglyphic or cunieform instructions for preparing food.
In an interesting twist, the most ancient recipe found, according to food historians is a series of clay tablets in ancient Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel exhilarated. During the time of the Romans a roman called Apicius created a few documents which described recipes enjoyed by wealthy roman citizens. In his publication, Apicius tells us how the roman meals were split into hors d`oeuvre, main course and dessert, a very modern way of dining. Aspicius also recounts how the early Romans made use of a wide range of herbs and spices, including a few that are still present in modern kitchens like basil, fennel and asafoetida. Moving our culinary historical trip onwards, there were a couple of interesting cookery books published in the fourteenth century : a book called `Forme of Cury`, and another entitled `Curye on Inglish`. Don`t be fooled by the titles though, these are not about the indian food that we all know today, but instead descriptions of the types of food eaten by the rich and wealthy people of the time. Later on, in the 15th century, people returning from the crusades brought us many new foods and spices from the Middle-East, including spices like coriander, parsley, basil and rosemary. These new culinary innovations prompted an increase in recipe publications, most of which are kept safe in academic collections. Over the next few hundred years, the upper classes tried to serve the most extravagent banquests, and as a result the best chefs and their collection of recipes could command a high salary. Notwithstanding that, it wasn`t until the nineteenth century that haute cuisine and recipe books became popular. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated years of their lives to assembling, verifying, and recording recipes to help cooks of their time. When we get to the 20th century, cookery books are increasing in popularity as a result of increased literacy, people having increased leisure time and having more money to spend. The arrival of TV gave us celebrity chefs and the demand for the spin-off recipe books. Which brings us neatly to the present day and the internet revolution, permitting everybody to search through massive numbers of recipes just like those on our web site. |
