The History of Recipes
It is quite feasible to trace the history of written cooking instructions far back into the far past, in truth as far back as the Egyptians, and quite possibly further than that. Interesting though that maybe, sadly, these ancient cookbooks were just simple hieroglyphic or cunieform instructions for food preparation.
The truth of the matter is, the most ancient recipe discovered, according to historians is a series of clay tablets in ancient Sumerian which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel `blissful`. Later on, in Roman times 25BC a man called Apicius compiled a collection of documents which described recipes cooked by his fellow Romans. In his publication, Apicius recounts how the meals of wealthy Romans were separated into appetizers, main meal and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef recounts how the ancient cooks used a wide range of spices, including a few that will be familiar to modern chefs for example basil, rue and parsley. Closer to modern times, there are two books which were published in the 1300s : a cookery book called `Forme of Cury`, and another called `Curye on Inglish`. Don`t be fooled by the titles though, these two books are unconnected to the indian food that is served today, but instead descriptions of the types of meals cooked for the upper classes of the time. In the fifteenth century, the Crusaders brought back many new foods and spices from the East, including spices such as basil and rosemary. The introduction of these new foods and spices created an eruption in recipe publications, some of which are kept safe in academic collections. During the succeeding few centuries, the powerful families of Europe tried to offer the most extravagent meals, and as a result chefs and their collection of recipes were much in demand. Notwithstanding that, it was during the 19th century that haute cuisine and recipe publications became popular. Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the USA, dedicated their lives to assembling, testing, and publishing recipes of the day. By the arrival of the 1900s, cooking books were starting to become popular as a result of increased literacy, leisure time and having more disposable income. Like it or not, the introduction of television brought us celebrity TV chefs and the demand for the accompanying recipe books. Which brings us neatly up to date and the internet revolution, allowing everyone to search through thousands of recipes just like those on this web site. |
