The History of Recipes
Written recipes as a concept can be observed far back into antiquity, certainly as far back as early Egypt, and possibly even further than that. Interesting though that is, in the main part, these early recipes were just very basic pictorial, hieroglyphic or cunieform recipes for meal preparation.
In an interesting twist, the oldest recipe discovered so far, according to Professor Solomon Katz, are some ancient tablets in Sumerian describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel exhilarated. Much later, in Roman times a roman called Apicius wrote some scripts describing recipes enjoyed by his fellow Romans. In his works, Apicius describes how the meals of wealthy Romans were separated into appetizers, main meal and desserts, a style of dining still practiced today. This early Roman chef describes how the ancient cooks used a good variety of spices and herbs, including a few that are still present in modern kitchens for example basil, rue and parsley. Later on, in the 15th century, people returning from the crusades brought back many foods and herbs from middle-east cuisine, such as parsley and basil. These new foods and tastes led to an explosion in books on cooking, many of which are kept safe in private libraries. The TV revolution gave us cooking programs and the demand for the accompanying recipe books. Which pretty much brings us to the present day and the internet revolution, allowing everyone to access thousands of recipes such as those found on this site. |
