2 1/4 cup All-purpose flour
2/3 cup Honey-crunch wheat germ
1/2 cup Oats, uncooked
1/4 cup Brown Sugar, packed
1 tbsp Baking powder
1/2 tsp Salt
1/4 tsp Baking Soda
10 tbsp Light Corn Oil Spread/1-1/2
Sticks
1 1/2 cup Mashed Bananas, about 3 med
6 oz Can frozen apple-juice
Concentrate, thawed
1/2 cup Egg substitute, thawed
1/3 cup Walnuts, chopped
1 tsp Vanilla extract
Directions
Directions: About 2 Hours before serving, or early in the day: 1.
Preheat oven to 350F. Grease 9"x5" loaf pan. In large bowl, mix first
7 ingredients. With pastry blender, cut in corn-oil spread until
mixture resembles coarse crumbs. Stir in bananas, undiluted
apple-juice concentrate, egg substitute, walnuts, and vanilla just
until flour is moistened. Spoon batter into pan. 2. Bake 60 minutes
or until toothpick inserted into center of bread comes out clean.
Cool bread in pan on wire rack 10 minutes; remove from pan and cool
slightely. Serve warm, or cool completely to serve later. Makes 18
servings.
Each serving: About 180 calories, 5 g. fat, 0 mg cholesterol, 135 mg
sodium.

The History of Recipes
We can trace the history of written recipes far back into ancient history, at least as far back into recorded history as the Egyptians, and possibly even further than that. However, generally, these ancient recipes were just simple hieroglyphic or cunieform instructions for preparing meals.
Moving our culinary historical trip onwards, we find two recipe books which date from the fourteenth century - one book called `Forme of Cury`, and another titled `Curye on Inglish`. Perhaps surprisingly, these are unconnected to the indian food that is popular today, but instead accounts of the types of food prepared for the upper classes of the time. Later on, in the 15th century, people returning from the crusades brought back a variety of spices and herbs from Arab cooking, including spices like coriander, basil and rosemary. The introduction of these new foods and spices caused a torrent in publications on food, many of which are now in private cookery archives. The TV revolution gave us TV cooks and the recipe books that accompanied them. And that neatly brings us to the present day and the invention of computers and the internet, permitting everybody to search through thousands of recipes like those on our web site. |
