The History of Recipes
It is possible to track the history of `recipes` back into distant history, at least as far back as the early Egyptians, and maybe even further. Interesting though that maybe, in the main part, these ancient records were just very simple pictorial, hieroglyphic or cunieform instructions for preparing food.
Later on, in The time of the roman empire 25BC a man called Apicius compiled a number of scripts detailing recipes cooked by wealthy roman citizens. In his publication, he tells us how the roman meals were split into hors d`oeuvre, main meal and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius recounts how the Roman chefs made use of many different aromatic flavors, including some familiar names like thyme, rue and parsley. Later, in the fifteenth century, knights returning from the crusades brought us many foods, spices and herbs from the Middle-East, including spices such as coriander, basil and rosemary. The introduction of these new herbs and spices prompted an explosion in manuscripts on cooking, the majority of which are kept safe in academic collections. By the time we get to the 1900s, recipe publications are in great demand, due to increased literacy, increased leisure time and having more money to spend. |
