The History of Recipes
Academics have traced the existance of recipes far back into history, in truth as far as ancient Egypt, and possibly even further. Interesting though that is, generally, these ancient records were just primitive hieroglyphic recipes for preparing meals.
Interestingly, the most ancient recipe in existence, according to academics are some stone tablets in Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel exhilarated and blissful. During Roman times around 25BC a roman called Apicius wrote a number of documents which described recipes prepared by wealthy roman citizens. In his works, he recounts how the roman meals were split into hors d`oeuvre, main course and desserts, a very modern way of dining. This early Roman chef describes how the chefs of Roman times were skilled in the use of many herbs, including some familiar names like basil, fennel and parsley. In the fifteenth century, people returning from the crusades brought back many new foods and herbs from Arab countries, such as parsley, basil and rosemary. The introduction of these new culinary ideas prompted a torrent in books on cookery, most of which are now in academic collections. During the succeeding few hundred years, the powerful and rich houses tried to lay on the most exotic meals, and as a consequence, cooks and their collection of recipes were at a premium. However, it wasn`t until the nineteenth century that fine cooking and recipe books rose to prominence. The Famous Mrs Beeton in the UK, and Fannie Merritt Farmer in the US, spent years to collating, verifying, and writing down recipes that were common in the better off homes of the day. Like it or not, the introduction of television gave us celebrity chefs and the recipe books that accompanied them. Which brings us neatly up to date and the internet revolution, allowing everyone to access thousands of recipes like the ones you can find on this web site. |
