The History of Recipes
Food historians have traced the existence of recipes way back into ancient history, at least as far back into history as the Egyptians, and maybe even further. However, mostly, these old cook books were just basic pictorial instructions for food preparation.
Fascinatingly, the most ancient recipe discovered so far, according to academics is a collection of stone tablets in ancient Sumerian which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel blissful. During the time of the Roman Empire a roman called Apicius wrote a number of documents which described recipes cooked by his fellow Romans. In his works, Apicius tells us how the meals of wealthy Romans were split into hors d`oeuvres, entrees and afters, a very modern way of dining. Aspicius also describes how the ancient chefs used many different herbs and spices, including a few that will be familiar to modern chefs like thyme, fennel and dill. In the fifteenth century, people returning from the crusades brought back many new spices and herbs from Arab cuisine, including parsley, basil and rosemary. These new culinary innovations caused a surge in manuscripts on cookery, most of which are kept safe in private collections. The introduction of television gave us celebrity TV chefs and the accompanying recipe books. Which pretty much brings us to the present day and the invention of computers and the internet, permitting us all to search through thousands of recipes like those on our web site. |
