The History of Recipes
Historians have tracked the existence of recipes back into antiquity, at least as far into history as early Egypt, and potentially, even further back. However, these, old records were just primitive pictorial instructions for preparing food.
As we move into The time of the roman empire 25BC a man called Apicius compiled a collection of scripts detailing recipes cooked by the Romans. In his works, he recounts how the meals of wealthy Romans were split into hors d`oeuvres, entrees and afters, something that is very familiar to us today. Aspicius tells us how the cooks of his times used a good variety of aromatic flavors, including some that we all recognise like bay, mint and asafoetida. Over the next few centuries, the wealthy families of the West competed to offer the most extravagent meals, and because of this the best chefs and their recipe collections became highly prized. Nevertheless, it wasn`t until the 1800s that formal cookery and recipe publications rose to prominence. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the US, devoted their lives to collecting, trying out, and writing down recipes that were common in the better off homes of the day. The introduction of television brought us TV cookery programs and the demand for the accompanying recipe books. And that pretty much brings us to the present day and the invention of computers and the internet, allowing everyone to access thousands of recipes such as those found on sites such as this. |
