The History of Recipes
We are able to follow the history of written recipes far back into antiquity, at least as far back into recorded history as the Egypt of the Pharoahs, and quite possibly further than that. However, in the main part, these ancient records were just simple hieroglyphic or cunieform recipes for food preparation.
Later on, in The time of the roman empire around 25BC a roman called Apicius wrote some documents describing recipes enjoyed by wealthy Romans. In his publication, he tells us how the meals were split into hors d`oeuvres, main course and dessert, a style of dining still practiced today. Aspicius also describes how the cooks of Roman times were skilled in the use of many different spices and herbs, including a few you will know such as basil, rue and parsley. During the following few hundred years, the powerful and wealthy houses competed with each other to serve up the most extravagent banquests, and because of this the best chefs and their recipe collections were at a premium. Nevertheless, it wasn`t until the nineteenth century that haute cuisine and recipe collections rose to prominence. Mrs Beeton in the UK, and Fannie Farmer in the US, devoted much of their lives to collating, testing, and writing down recipes for their fellow cooks to enjoy. By the time we get to the 1900s, cook books are in high demand, as a result of higher levels of literacy, people having increased spare time and having more disposable income. |
