The History of Recipes
We can track the history of meal recipes way back into the distant past, at least as far into history as ancient Egypt, and maybe further still. Having said that, in the main part, these old recipes were just primitive hieroglyphic instructions for preparing food.
In fact, the oldest recipe discovered so far, according to food historians are a few tablets in the Sumerian language which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel blissful and exhilarated. Progressing into The time of the roman empire 25BC a man called Apicius assembled a number of documents detailing recipes cooked by his fellow Romans. In his publication, Apicius recounts how the meals of wealthy Romans were separated into appetizers, entrees and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. He also informs us how the ancient chefs used a good variety of spices and herbs, including a few you will know such as basil, fennel and dill. Later on in the 1400s, the Crusaders brought back many foods and herbs from Arab cuisine, including coriander, basil and rosemary. The introduction of these new foods and spices created a surge in recipe manuscripts, some of which are now in private cookery archives. For the centuries that followed, the powerful families of Wesstern Europe competed to offer the most exotic meals, and because of this the best cooks and their recipes were at a premium. Notwithstanding that, it was during the 1800s that haute cuisine and recipe publications rose to prominence. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, devoted their lives to collecting, testing, and publishing the recipes that were being prepared for the better households. The introduction of the TV brought us TV cookery programs and the recipe books that accompanied them. And that neatly brings us to the present day and the invention of the internet, permitting us all to access thousands of recipes such as those found on this site. |
