The History of Recipes
Historians have traced the existence of recipes far back into distant history, in fact as far into history as the Egypt of the Pharoahs, and quite possibly further than that. However, mostly, these early records were just simple hieroglyphic instructions for preparing meals.
Fascinatingly, the most ancient recipe discovered so far, according to experts in ancient history are a few clay tablets in the Sumerian language which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel wonderful. Progressing into The time of the romans 25BC a roman called Apicius wrote a few documents showing how to cook the recipes cooked by wealthy Romans. In his works, Apicius recounts how the meals of wealthy Romans were divided into appetizers, main course and desserts, something we still use today. Aspicius describes how the Roman chefs were skilled in the use of many aromatic flavours, including many that are still in use today such as thyme, fennel and parsley. Over the following few centuries, the powerful and wealthy strove to serve up the most extravagent banquests, and because of this the best chefs and their collection of recipes increased in prestige. Even so, it was during the nineteenth century the formal cooking and recipe collections rose to prominence. The Famous Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, spent years to collating, trying out, and recording popular recipes of the day. When we get to the twentieth century, cookery publications are in great demand, as a result of more people being able to read, people having more leisure time and having more disposable income. |
