The History of Recipes
It is quite possible to track the history of transcribed cooking instructions way back into history, at least as far back into history as pharonic Egypt, and maybe further still. Having said that, generally, these early records were just basic pictorial, hieroglyphic or cunieform recipes for preparing food.
The truth of the matter is, the oldest recipe discovered so far, according to experts in ancient history are a few tablets in the Sumerian language which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel blissful. Progressing into The time of the romans around 25BC a roman called Apicius compiled a collection of scripts describing recipes prepared by wealthy roman citizens. In his works, Apicius recounts how the roman meals were divided into hors d`oeuvres, main meal and desserts, a style of dining still practiced today. This early Roman chef tells us how the Roman chefs were skilled in the use of many different spices and herbs, including many that are still in use today for example basil, fennel and asafoetida. During the following few centuries, the rich and powerful families of Europe competed with each other to offer the most extravagent meals, and because of this the best cooks and their recipe collections increased in prestige. Nevertheless, it wasn`t until the 19th century the formal cooking and recipe collections became really popular. Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, devoted much of their lives to collating, testing, and recording the recipes of their peers. By the advent of the 1900s, cookery publications are in great demand, as a result of higher levels of literacy, people having more spare time and a general increase in wealth. |
