The History of Recipes
Food historians have proved the existence of recipes back into ancient history, in fact as far into history as the ancient Egyptians, and possibly even further. Having said that, sadly, these old cook books were just simple hieroglyphic or cunieform instructions for preparing meals.
In an interesting twist, the oldest recipe discovered so far, according to academics is a collection of clay tablets in the Sumerian language which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel `wonderful`. Much later, in Roman times a roman called Apicius wrote some documents detailing recipes enjoyed by wealthy roman citizens. In his works, he recounts how the meals of wealthy Romans were split into starters, main meal and desserts, something that is very familiar to us today. Aspicius informs us how the ancient chefs were skilled in the use of many different herbs, including a few that will be familiar to modern cooks for example bay, fennel and asafoetida. Continuing our culinary historical journey, we find a couple of recipe books dating from the fourteenth century ; a cookery book entitled `Forme of Cury`, and another, similary called `Curye on Inglish`. Perhaps surprisingly, they have no connection with the spicy food that appears on menues today, but rather descriptions of the types of food prepared by the cooks of the rich and wealthy people of the period. Later on, in the 15th century, people returning from the crusades brought back a variety of spices and herbs from middle-east cuisine, including spices like parsley and basil. The introduction of these new foods and spices was responsible for an explosion in cookery books, some of which still exist in private collections. When we get to the twentieth century, cook books are highly popular mostly due to higher levels of literacy, people having increased leisure time and having more disposable income. The TV revolution gave us TV cooks and the accompanying recipe books. And that pretty much brings us to the present day and the invention of the internet, permitting us all to access thousands of recipes like those on the site you are now reading. |
