The History of Recipes
Written cooking instructions as a concept can be tracked back into the far past, in fact as far into history as pharonic Egypt, and quite possibly further than that. However, generally, these early cookbooks were just primitive pictorial, hieroglyphic or cunieform instructions for preparing meals.
In an interesting twist, the most ancient recipe found, according to Professor Solomon Katz, is a series of stone tablets in the Sumerian language which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel `exhilarated, wonderful and blissful`. Later on, in The time of the romans 25BC a man called Apicius created a few documents showing how to cook the recipes cooked by wealthy roman citizens. In his publication, he recounts how the meals of wealthy Romans were split into hors d`oeuvres, main course and desserts, something that is very familiar to us today. This early Roman chef recounts how the ancient cooks made use of many different spices, including some that we all recognise like basil, rue and parsley. Over the succeeding few centuries, the rich families of Wesstern Europe strove to offer the most extravagent meals, and as a result the best chefs and their recipe collections were greatly in demand. Nevertheless, it wasn`t until the nineteenth century that cookery and recipe publications really came of age. The Famous Mrs Beeton in the UK, and the equally famous Fannie Farmer in the USA, dedicated the best years of their lives to collating, testing, and writing down recipes to help cooks of their time. When we get to the 20th century, cooking publications are greatly in demand as a result of increased literacy, people having increased free time and being a little richer. |
