The History of Recipes
We can track the history of written recipes far back into ancient history, at least as far as ancient Egypt, and maybe even further. However, these, early cookbooks were just very simple hieroglyphic or cunieform instructions for preparing food.
As we move into The time of the romans around 25BC a Roman scholar, called Apicius, assembled some scrolls describing recipes cooked by wealthy roman citizens. In his works, Apicius tells us how the meals of wealthy Romans were separated into hors d`oeuvres, main course and desserts, something that is very familiar to us today. He also tells us how the ancient cooks made use of a wide range of aromatic flavors, including many that are still in use today such as bay, fennel and dill. Later, in the fifteenth century, knights returning from the crusades brought us many foods, spices and herbs from the holy land, including spices such as coriander, parsley, and rosemary. The introduction of these new foods and spices created an increase in recipe books, some of which are kept safe in private libraries. By the advent of the 20th century, recipe books were in high demand, due to better eduction, increased leisure time and disposable income. |
