The History of Recipes
Transcribed cooking instructions as a concept can be observed back into ancient history, in fact as far as pharonic Egypt, and maybe even further. Interesting though that is, these, early recipes were just very simple hieroglyphic or cunieform instructions for preparing food.
The truth of the matter is, the oldest recipe discovered, according to historians are a few ancient tablets in the Sumerian language which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel exhilarated and blissful. As we move into The time of the romans around 25BC a man called Apicius created a collection of scripts describing recipes enjoyed by wealthy Romans. He describes how the meals of wealthy Romans were separated into appetizers, main course and desserts, a style of dining still practiced today. This early Roman chef informs us how the cooks of Roman times used many different herbs and spices, including some that we all recognise such as thyme, mint and parsley. During the next few centuries, the rich families of Europe competed with each other to serve up the most exotic meals, and consequentially the best chefs and their recipes were much in demand. Nevertheless, it was during the nineteenth century that cookery and recipe collections became really popular. Mrs Isabella Beeton in the UK, and Fannie Farmer in the US, devoted their lives to assembling, verifying, and writing down popular recipes of the day. By the advent of the 20th century, cooking publications are in high demand, mostly due to better eduction, people having increased leisure time and having more money. The revolution that is television brought us cooking programs and the recipe books that accompanied them. Which brings us neatly up to date and the invention of the internet, allowing everybody to access thousands of recipes like those on our site. |
