The History of Recipes
Food historians have proved the existance of recipes back into history, in truth as far back into recorded history as the Egypt of the Pharoahs, and quite possibly further than that. In practice though, in the main part, these ancient cook books were just very simple pictorial, hieroglyphic or cunieform recipes for food preparation.
During the time of the Roman Empire a man called Apicius compiled a few documents which described recipes enjoyed by wealthy Romans. In his publication, Apicius tells us how the roman meals were separated into hors d`oeuvres, main course and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius also informs us how the ancient Romans made use of many herbs and spices, including some that we all recognise like bay, mint and parsley. Over the following few hundred years, the powerful and wealthy tried to offer the most extravagent meals, and as a consequence, cooks and their collection of recipes were greatly in demand. Nevertheless, it was during the 1800s that cooking and recipe publications reached a high level of popularity. The Famous Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, dedicated their lives to collating, verifying, and writing down recipes to help cooks of their time. By the arrival of the 20th century, cook books were starting to become popular as a result of more people being able to read, more free time and having more money. |
