The History of Recipes
Recipes as a concept can be tracked back into antiquity, at least as far back into history as the ancient Egyptians, and maybe even further. However, in the main part, these early recipes were just very basic pictorial, hieroglyphic or cunieform instructions for preparing meals.
The truth of the matter is, the most ancient recipe in existence, according to experts in ancient history are some stone tablets in Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel `blissful`. Moving on, we have two interesting recipe books from the 1300s ; a book titled `Forme of Cury`, and another named `Curye on Inglish`. Amusingly, they are unconnected to the spicy food that appears on menues today, but rather accounts of the types of meals eaten by the rich and wealthy people of those days. Later, in the 15th century, knights returning from the crusades brought us many new foods, spices and herbs from Arab countries, including spices such as rosemary and coriander. These new spices and herbs was responsible for an eruption in cookery books, some of which still exist in private cookery archives. During the following few centuries, the rich families of Wesstern Europe tried to serve up the best banquets, and as a consequence, chefs and their recipe collections could command a high salary. Even so, it was during the 19th century the formal cooking and recipe publications really came of age. Mrs Beeton in the UK, and Fannie Merritt Farmer in the US, devoted their lives to collating, testing, and writing down recipes to allow everyone to enjoy them. The revolution that is television brings us celebrity chefs and the spin-off recipe books. Which brings us neatly to the present day and the invention of the internet, allowing everyone to access thousands of recipes like those on this site. |
