The History of Recipes
Academics have traced the existance of recipes way back into the distant past, at least as far back as early Egypt, and maybe even further. Interesting though that maybe, in the main part, these ancient cookbooks were just primitive hieroglyphic recipes for preparing food.
Fascinatingly, the oldest recipe found, according to food historians is a series of stone tablets in ancient Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel blissful. Progressing into The time of the romans 25BC a man called Apicius assembled a collection of scripts describing recipes enjoyed by the Romans. In his works, Apicius tells us how the meals of wealthy Romans were separated into appetizers, entrees and afters, a very modern way of dining. Additionally, he informs us how the early Romans made use of a good variety of herbs and spices, including some that we all recognise for example bay, mint and asafoetida. Over the next few centuries, the powerful families of the West competed with each other to serve the most extravagent banquests, and as a result cooks and their recipes could command a high salary. Nevertheless, it was during the 1800s that cooking and cookery books really came of age. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated years of their lives to collecting, verifying, and recording recipes of the day. By the arrival of the twentieth century, recipe books are in high demand, as a result of increased literacy, more free time and having more money to spend. |
